Welcome back to the dressing series! This is the second of 4 of my favorite dressing recipes I am sharing with you. You can see the recipe for the first one, a simple lemon tahini dressing, here.

THICK & CREAMY W/ A KICK (2 servings):
- 2 tbsp non-dairy yogurt (I used Kite Hill’s plain almond yogurt)
- 1 tsp mustard
- 1 tbsp tahini
- 1 tsp gochujang
- 2 tsp water
- 1 tbsp (about 1 wedge) lemon juice
- Combine all ingredients in a bowl
- Mix until well combined

Raw spinach takes up so much SPACE and then when it's cooked it wilts into basically nothing… no in between. I had to split up last night's salad in two because it wouldn't all fit in one bowl lol. Anyway I'm loving all the green these days!! My run this morning was beautiful, being surrounded by such lush color….
